Happy Friday!! I know I haven’t posted in a while… things have been insane at work until this week when it finally calmed down a bit and I had a few evenings of free time! The weather has been gorgeous and I spent so much more time outside, whether it be on my lunch hour or after work which really puts me in a good mood! It’s crazy how the weather makes such a difference. I have also been super enthused to cook more and try some new recipes, so more coming this way!
Today I am sharing one of the things I am obsessed with at the moment which is making the “Muffin in a Cup”. This is gluten-free, flourless, low carb, super convenient and DELICIOUS! I am always searching for new gluten-free options. There are times where all I want is a piece of bread or something of that substance and that is usually when I make one of these! There are a ton of variations you can do to constantly change it up. More often than not, I eat this for dessert so I add stevia. I also added a little pumpkin purée for this one because I just love pumpkin! Other times, I won’t add any stevia and eat it for breakfast or with dinner. You can really do a lot with it! I have even experimented by adding a scoop of cocoa powder and chocolate chips or by taking it out of the cup in the morning and adding a tiny bit of jelly. There are countless variations… be creative ;).
One thing I have always struggled with is portion control when it comes to desserts… like most people I assume haha. When T reads this, he will laugh. I can’t count how many times we have finished a tray of brownies or cookies on Sunday Funday (every Sunday since I was little, we have family over and a huge Italian feast.. I look forward to it every week!!!) and I am like, “how is this possible? It is just the two of us?!?”. Anyway… making a muffin in a cup eliminates any option to have more. It is all done for you :). It is the perfect portion… maybe even bigger than necessary. I use golden flaxseed meal as the base which provides a lot of fiber and omega-3 fatty acids. You can buy golden flaxseed meal at most grocery stores… I get the Bob’s Red mill brand. Cheers to muffins in cups!
Ingredients:
1 large egg
1/2 teaspoon baking powder
1/4 cup golden flax meal
1/ teaspoon cinnamon
1/4 teaspoon stevia
1 teaspoon of olive oil or coconut oil
1 tablespoon pumpkin purée
Directions:
In a microwave-safe mug, combine all ingredients. Take whisk and stir making sure everything is thoroughly mixed together. Put in microwave on high for 60-70 seconds. It depends on your microwave so test it out!
