To celebrate Father’s Day this year, I decided to make some of my dad’s favorites, clean! I am obsessed with grilling in this awesome weather so I’ve been trying a lot of new things on the grill, although I feel like I am much more creative with the sides I create. I usually will pair them with a piece of grilled chicken! Since it was all about my dad and he loves seafood, we had a variety of that along with some delicious sides! One of the sides I made was clean onion rings. I recently came up with a low-carb, gluten-free recipe for them that is delicious and really hits the spot if you are craving fried onion rings ;). For the record, I have probably had fries/onion rings less in my life than I can count on my fingers! I was never exposed to them as a child and they never really interested me! …I recently was at a restaurant and tried one and was like wow these really are good! Ever since, I was determined to make a healthier version. I think I have mastered it here! 🙂
Ingredients:
1 large yellow onion
1/2 cup Bob’s Red Mill Golden Flax Meal
Cooking spray
Extra virgin olive oil
1 egg
Directions:
Purchase large yellow onions. Remove skin and cut into 3/4 inch slices. Carefully separate the circles and spray lightly with olive oil. Take a cookie sheet and grease lightly with olive oil. Take 1 egg and wisk in a small bowl. Measure 1/2 cup Golden Flaxseed Meal (I use Bob’s Red Mill but you can use any brand). Add 1/2 tsp garlic powder and mix together in bowl. Dip one onion circle into egg mixture then put in bowl and with teaspoon cover onion completely.
