Hi everyone! We are about to kick-off Memorial Day weekend and I just wanted to post one of the easiest salads ever; one that I am bringing to a barbecue this weekend! My time has been super limited due to the whole remodeling process of our new home! With 85 days left (yes, I have a countdown on my phone that reminds me every morning lol) to go till our wedding, we are working like CRAZY making sure our house will be done :). We were so relaxed for like months, and now it is crunch time! There are so many awesome Memorial Day sales, so we are trying to take advantage of it for all of our appliances! 🙂
Anyway, I was thinking the other day and wanted to post one of my favorite simple salads. There are only a few ingredients, but sometimes I forget about these simple recipes that are often just as delicious as more complex recipes! When I go to a barbecue, I am always thinking about what will be gluten-free. I typically bring something gluten-free so at a minimum, I have what I brought to eat :). If you are looking to make something unbelievably quick and simple, look no further. For those that know me, you know I have a cheese obsession. My brother recently brought amazing cheese from Murray’s in the City when he came to visit and that mozzarella is amazing for this recipe. The Whole Foods by me also has like the most extensive cheese selection ever, so I got the locally made mozzarella from there, but you can get it from any food store you choose! Since this is a light recipe, the quality mozzarella with a creamy consistency is your best bet!
Directions:
Ripe tomatoes (slice)
Mozzarella (sliced)
Basil leaves
Extra Virgin olive oil (the best you can find)
1/4 teaspoon sea salt
Course ground pepper to taste
Slice all and arrange on a platter or plate. Drizzle with olive oil, sprinkle with pepper.
