One of the reasons I love this time of year so much is that it brings everyone together and incorporates tons of delicious food, two of my favorite things. T and I have been on the go at Christmas parties, planning our wedding and working on our new home. It has been close to impossible to take a break and relax. Last night was the first night we got to sit down and watch a Christmas movie! I have really been trying to slow down and absorb all that is happening and just enjoy it all! With all that is going on, it has been hard to be healthy. I set a goal for myself to be really good on the days we have nothing, then splurging when we go out.
There have been a few nights where we had to be somewhere later in the evening but ate dinner at home. I made this meatloaf recipe I am sharing today and froze it until the day we needed it. That day, I took it out to defrost in the morning and put it in the oven an hour before we wanted dinner. It was amazing!!!
For this recipe, I made two loaves of meatloaf because I always freeze one. If you only want one, you can cut the recipe in half. I actually hate ketchup with a passion. This is the only recipe I ever eat it with but I have tried making many variations of meatloaf not using it and don’t think it is as good so here you go!
Ingredients:
3 lbs. 99% lean ground turkey
1/4 cup breadcrumbs ( I use gluten free)
1/2 cup quick oats
2 eggs
1 onion (chopped)
1/2 teaspoon ground black pepper
Sea salt to taste
1/2 cup ketchup (I used organic)
Preheat oven to 350 degrees. Lightly rub olive oil on the inside of the loaf tins. Combine all the ingredients in a bowl then desperate into both loaf tins. Take about a tablespoon of ketchup and spread on top so there is a very thin layer on top of the meatloaf. Place in oven and cook for about an hour. Enjoy!
